Sweet And Spicy Noodles
Description
Say hello to the most delicious Asian-inspired Sweet and Spicy Noodles. Ready in just 20 minutes, this dish hits the spot with its sweet, savoury and spicy flavours. Topped off with fresh crunchy veggies and drizzled with lime juice, we promise it will be love at first slurp.
Ingredients
- 1 packet brown rice noodles
- 1/4 cup Plenty Cold Pressed Olive Oil
- 2-3 cloves garlic, minced
- 1-2 tsp Gourmet Chilli Flakes
- 3 tbsp Spiral Tamari Sauce (soy sauce can also be used)
- 1 tbsp Carwari Organic Rice Vinegar
- 1 tbsp Spiral Hatcho Miso
- 1 tbsp Riverina Grove Bu Hummers Goat Chaser Hot Spicy Sauce
- 1 tsp Locako’s Natural Monk Fruit Sweetener (you can also use coconut sugar)
- Handful of fresh coriander, chopped
- 2 tbsp shallots, finely chopped
- 2 cups finely sliced cucumber and carrot
- 1 lime, sliced
- 1/4 tsp both salt and pepper (or to taste)
Preparation method
- Bring a large pot of water to a boil and cook noodles until soft, this should take approx. 6 minutes
- Heat another pan on the stove on medium heat. Add oil and allow it to warm slightly
- To the oil, add the soy sauce, garlic, rice vinegar, miso, hot sauce and sweetener of choice. Stir ingredients through and allow it to simmer until it begins to thicken (this may take 8-10 minutes)
- Remove from heat and mix in the drained and cooked noodles. Add a splash of water if needed to help noodles mix in with sauce
- Serve noodles, top with shallots, sliced cucumber and carrot, fresh lime, red chilli flakes and salt and pepper. Additional add ons may be tofu, tempeh, shredded chicken or greens
