Preparation method

  1.  Prepare ingredients by grating the veggies. Heat 2 tbsp of olive oil in a large pot over medium heat. 
  2. Add onion and garlic, cook for 3 mins. Mix in veggies, cooking until soft. Add lentils and mixed herbs and combine.
  3. Stir in passata, tinned tomatoes and stock. Cover the pot and lower the heat to simmer for 20 minutes. 
  4. Cook pasta as per packet instructions.
  5. Divide pasta and lentil mixture and enjoy!
