Speedy Lentil Spag Bol

Ingredients
- 400g canned Spiral Organic Lentils, drained and rinsed
- 1 Tbsp Planet Organic Mixed Herbs
- 1 brown onion, diced
- 2 cloves of garlic, minced
- 1 carrot, grated
- 2 cups of zucchini, grated
- 200ml Global Organics Tomato Passata
- 400ml of Muir Glen Organic Diced Tomatoes
- 200ml of Massel Organic Plant Based Liquid Beef Stock
Preparation method
- Prepare ingredients by grating the veggies. Heat 2 tbsp of olive oil in a large pot over medium heat.
- Add onion and garlic, cook for 3 mins. Mix in veggies, cooking until soft. Add lentils and mixed herbs and combine.
- Stir in passata, tinned tomatoes and stock. Cover the pot and lower the heat to simmer for 20 minutes.
- Cook pasta as per packet instructions.
- Divide pasta and lentil mixture and enjoy!
