Roasted Carrot Hummus
Description
Dip, spread and dunk your way to total wellness with this Roasted Carrot Hummus. Balancing the perfect combo of salty and sweet, this dip is the perfect addition to any nourish bowl, salad or charcuterie board.
Ingredients
- 2 carrots, peeled and chopped
- 1 tbsp Spiral Organic Coconut Oil
- 1 tsp Gourmet Ground Cinnamon
- 1 lemon, juiced
- 1/2 garlic clove
- 1 tbsp Mayvers Tahini Hulled
- 1 tsp Planet Organic Maple Syrup
- 1 tsp Lotus Sea Salt Fine
- 3-4 tbsp water
- 1 tbsp Spiral Organic Extra Virgin Olive Oil
- 1 carrot, chopped
- 1 cucumber, chopped
- Slendier Original Seed Mix Crackers
Preparation method
Method:
- Preheat oven to 180C.
- Place chopped carrots on an oven tray lined with baking paper and place in oven for 30-45 minutes, or until carrots are well cooked, fragrant and tender.
- Remove carrots from oven and transfer to a food processor or high speed blender with all other ingredients. Blend well until all ingredients are well combined, smooth and creamy. Add water if needed for a smoother and thinner consistency. Taste as you go, adding salt or other seasonings if desired.
- Spoon dip into a bowl and serve with fresh veggies and crackers.
Notes:
- You can serve this dip as part of a charcuterie board, as a toast or sandwich spread, or serve with other raw vegetables and ingredients such as root vegetable chips, raw vegetables (snap peas, broccoli, celery, capsicum) and toasted pita bread.
- If you have leftovers, you can place the carrot hummus in an airtight container and store in the fridge for up to 3 days.
