Hug In A Mug Pumpkin & Cauliflower Soup

Hearty, full of flavour and oh-so-delicious, this Pumpkin and Cauliflower Soup feels just like a warm hug. Packed full of winter veg, sprinkled with warming spices and served with crunchy sourdough, this recipe is the ultimate Winter comfort food. Hot tip; for easy weeknight meals, cook and freeze in batches- you can thank us later.

Ingredients

Preparation method

  1. Break cauliflower up into medium chunks and slice up pumpkin into small chunks, discarding the pumpkin skin
  2. Add 1 tbsp coconut oil to a large saucepan or pot over medium heat
  3. Add leek and saute for 2-3 minutes
  4. Add garlic and saute for an extra 1-2 minutes
  5. Add vegetable stock, turmeric, salt, turmeric, and pepper and bring to a boil for 5 minutes
  6. Turn down to simmer for 20 minutes, or until vegetables are cooked and tender
  7. Transfer all contents into a high speed blender or food processor and blend until smooth
  8. Ladle soup into serving bowls and top with chilli flakes, spring onion, and cracked pepper. Sometimes I also love to add some cream or coconut yoghurt as a topping too.
  9. Enjoy!
