Hug In A Mug Pumpkin & Cauliflower Soup

Ingredients
- 1/2 of a jap or kent pumpkin (approx. 400-500g)
- 1/2 head cauliflower, washed
- 2 garlic cloves
- 4 cups Massel Organic Liquid Vegetable Stock
- 1 tbsp Coconut Magic Virgin Coconut Oil
- 1/2 tsp Gourmet Turmeric Powder
- 2 tbsp leek, finely chopped
- 1 tsp Salt Of The Earth Fine Celtic Salt (or to taste)
- 1/4 tsp pepper
- 1 tbsp spring onion, finely shopped
Preparation method
- Break cauliflower up into medium chunks and slice up pumpkin into small chunks, discarding the pumpkin skin
- Add 1 tbsp coconut oil to a large saucepan or pot over medium heat
- Add leek and saute for 2-3 minutes
- Add garlic and saute for an extra 1-2 minutes
- Add vegetable stock, turmeric, salt, turmeric, and pepper and bring to a boil for 5 minutes
- Turn down to simmer for 20 minutes, or until vegetables are cooked and tender
- Transfer all contents into a high speed blender or food processor and blend until smooth
- Ladle soup into serving bowls and top with chilli flakes, spring onion, and cracked pepper. Sometimes I also love to add some cream or coconut yoghurt as a topping too.
