Pulled Jackfruit Tacos
Description
Get the margi's ready, because these mini tacos aren't mucking around. Keeping it vegan and gluten free doesn't have to be boring, and we can prove it. These pulled jackfruit tacos pack a mighty punch thanks to the crunchy cabbage, the creamy avocado, the crispy tortillas and of course the juicy jackfruit. A quick meal that every member of the family will enjoy!
Ingredients
- 300g Upton's Naturals Jackfruit
- 12 Diego's GoMex Yellow Corn Tortillas
- 1/4 purple cabbage, shredded
- 2 carrots, grated
- 2 avocados, roughly chopped
- 2 limes sliced
- Riverina Grove Bum Hummers Organic Chilli Salsa
Preparation method
- Heat up the jackfruit in a saucepan over medium heat for 8-10 mins, then shred with two forks.
- To assemble, place a spoonful of jackfruit in a tortilla, then top with shredded cabbage, grated carrot, chopped avocado, salsa and drizzle with fresh lime.
