Inner Beauty Bowl
Description
What do we call a meal with perfect portions of good fats, protein, fresh vegetables and carbohydrates? Beauty in a bowl of course! This quick and easy recipe is sure to make your skin glow brighter than ever. Featuring wild caught salmon and avocado - a combo we can all get behind, this bowl is a taste sensation.
Ingredients
1 piece of fresh, wild caught salmon
1 cup broccoli, sliced
1 zucchini, spiralled
1 cup pre-cooked Lotus Organic White Quinoa, cooled
1 avocado, diced
1 tbsp sauerkraut - LINK
2 tbsp Glowing Green Goddess Dressing
1 tsp Plenty Cold Pressed Olive Oil
1/2 lemon, juiced
1 tbsp Essential Hemp Organic Hemp Seeds
1 tbsp Live Wholefoods Organic Activated Pepitas
Lemon wedges, to serve
Pinch salt and pepper
Preparation method
- Fill a medium saucepan with water and bring to a boil. Add broccoli to boiling water and allow to boil for 2-3 minutes or until just tender. Remove and cool with iced water and set aside.
- Heat olive oil in a small-medium frying pan over medium heat. Add quinoa, broccoli and lemon juice. Stir all briefly for a minute or so and remove from heat.
- Sear salmon in another frying pan over medium heat, cooked to your liking
- Serve salmon, quinoa, broccoli, zucchini, avocado and sauerkraut all into a large bowl. Top with hemp seeds, pepitas, a wedge of lemon and a drizzle of Glowing Green Goddess dressing. Sprinkle with salt and pepper to taste
