Ingredients
Fruit mixture:
- 2-3 large apples cored and chopped
- 3 cups blueberries, fresh or frozen
- 2 tbsp Pure Harvest Organic Rice Malt Syrup
- Juice of 1 orange (approx. 3 tbsp juice)
- 1 tsp Very Vanilla Vanilla Extract
- 1 tsp Gourmet Ground Cinnamon
- 1 cup Lotus Organic Rolled Unstabilised Oats
- 1/2 cup Lotus Raw Whole-Nut Almond Flour
- 1/2 cup Natures Delight Organic Walnuts, roughly chopped
- 1/2 cup Loving Earth Shredded Coconut
- 1/4 cup Niulife Coconut Sugar
- 1 tbsp Planet Organic Cacao Powder
- 1/4 cup coconut oil, melted
- 1 tbsp Pure Harvest Organic Rice Malt Syrup
- 1/8 tsp salt
Preparation method
- Set oven temperature to 180C
- Place the chopped apples into a large bowl along with the blueberries
- Add the rice malt syrup, vanilla extract, orange juice and cinnamon. Stir to combine.
- Transfer the fruit mixture to a standard square baking dish or pan
- Bake in oven for approx. 8-10 minutes. You want the fruit mixture to be warm and beginning to bubble
- In the meantime, combine ingredients of the crumble mix into a bowl. The mixture should be well coated but not dry. Add an extra tbsp of coconut oil to the mixture if needed
- Remove dish from oven, top fruit mixture with the crumble mixture and bake in the oven for a further 25-30 minutes. You want the crumble top to be crispy and browned
- Serve as is or with vegan custard, a scoop of dairy-free vanilla ice-cream, whipped coconut cream, vegan caramel sauce, or a dollop of coconut yoghurt
Notes:
- You can also use an air fryer by placing the crumble into an air fryer at 160C for 20-25 minutes, or until brown and crispy
